This blast chiller and freezer runs cooked food from +90 °C down to +3 °C, or down to -18 °C, in a single cycle. Universal guides hold seven Gastronorm 1/1 trays or grills at 530 by 325 mm, or at 600 by 400 mm.
Yield is 25 kg on the positive cycle and 15 kg on the negative cycle, rated at 43 °C ambient and 65% relative humidity. It is a Tecnodom unit, stainless steel inside and out.
